Joe’s cousin posted on facebook a few weeks ago that she had sourdough discard available to anyone who wants it. Joe and I then hopped in the car and made the 45 minute drive to her house to pluck it from her mailbox. We’ve since been keeping “puff daddy” our starter alive by feeding it twice a day with equal parts flour and water. Joe has been the one to really take to the care and keeping of Puff Daddy and has since become the resident bread maker. He has really improved his skills and like any accountant keeps regular data on what worked and what didn’t. He found that the best bread recipe to use with the sourdough starter is this recipe from food52.com. The starer was also created from the food52.com recipe. I have been in charge of what to make with the extra that gets taken out each day after the starter is fed.
I think my favorite way to enjoy sourdough is a thick slice toasted with butter, microgreens and a sprinkle of sea salt. Joe always takes it with butter and jam. It’s a good thing that it’s summer because I am almost out of the Berry Champagne Jam that I canned last summer.
Breakfast aside we have been enjoying all the different things you can make with the sourdough extra!
Last night we made a pizza using this simple pizza crust recipe. We topped it with pineapple and a chipotle tomato sauce and it was fantastic!
We’ve also been experimenting with this cracker recipe from King Arthur Flour. The first time I made it I used everything bagel seasoning but lately we’ve been using just dried thyme. It’s fantastic with a bit of baked goat cheese.
And last but not least there is always pancakes.
A few things that are still on my list to try with our sourdough starter are cinnamon rolls and bagels! Maybe this weekend.
