my friend julie brought me a slice of this casserole at work a few weeks ago. she had found the quick and easy recipe on pinterest but let me tell you, it tasted like she slaved away in the kitchen all morning. i practically inhaled the biscuits and gravy and demanded the recipe for myself.
i made it exactly like the recipe the first few times i made it. then i felt it was best to spread my wings and doctor it up to my liking. the best part about casseroles is that they do give you the ability to ad lib. if you don’t have sausage you could throw in ham or bacon. no cheddar? try swiss. thank you super simple casseroles for being so forgiving to those of us who avoid grocery stores like the plague. i’m seriously trying to figure out how i’m going to survive once winter comes and farmers market season is donezo. help me.
can’t think about that now. must think about casseroles and using veggies from the garden and running around feeling like maria from sound of music in the mountains. or maybe just breakfast casserole.
i made this for the albers family cook out so i doubled the recipe. one casserole i added raw chopped jalapeños because i love a little kick. the big platter i left mild. surprisingly many preferred it spicy.
ok here it is. this is an adaptation of biscuits and gravy casserole by just a pinch recipes.
what you need:
1.5 lbs of sausage
6 large eggs
1 pkg brown gravy powder (prepared)
1 10-16oz buttermilk biscuit tube dough. i used the pillsbury large 16oz tub
salt and pepper
2 cups of cheddar shredded
1/2 cup of heavy cream
1/4 cup of diced chives or green onions
2-3 jalapeños dice, seeds removed (or left in for super kick)
1. heat oven to 350 and spray 9×13 inch pan. cut dough into little squares and line bottom of pan
2. brown meat, drain and pour over the dough
3. cover with the cheese, green onions and jalapenos
4. whisk eggs and cream and pour over the cheese. let sit about 5 minutes to soak up
5. make the gravy if you haven’t already and pour over top of the dish. let set about 2 minutes again
6. toss in the oven and bake for about 30 – 40 minutes. I used a le creuset oval baking dish and it was ready in 35 minutes.

We make one almost identical, except we use white gravy and bake it in our smoker. If you have one, highly recommend.
