Simple Strawberry Sherbet Recipe

Food & Beverage

July 24, 2019

i have once again been a canning queen at my house prepping all the fruit and veggies to enjoy all winter long. so far i’ve made strawberry jam, cherry pie filling, cherry bbq sauce and cherry salsa. with every recipe there is bound to be a bit of extra produce so i try to find thing to make out if it. with the cherries i made a small dish of crisp for joe and i and with the strawberries i tried this no churn, blender friendly strawberry sherbet. bonus… it has three ingredients.

yep you read that right. 3 ingredient strawberry sherbet (not including a pinch of salt). if your blender is tough enough (i have a vitamix) you can mix it a bit on the thick side and enjoy right away. otherwise toss it in the freezer for a couple of hours and it’s the perfect consistency.

i feel like you could do this with any fruit that doesn’t have skin. watermelon, pineapple etc. I think you could do a blueberry sherbet but you might try to strain it to get the tough skins of the fruit off. and who has time for that? ok now i’m curious to try it.

this made quite a big batch but i wanted to use the entire can of sweetened condensed milk. because you know how much i love that.

lets keep it simple shall we?

6 cups of chopped strawberries, frozen
1 14oz can of sweetened condensed milk
1/4 cup of fresh squeezed lime juice
a pinch of salt

toss in a blender and spin until smooth. you might have to do this in batches until the berries break down a bit. pour into a freezer friendly container and freeze. should keep for at least 5 days but we ate ours into the week.

enjoy!
